Has anyone ever vacuum pack perch before?
I have vacuum packed perch and all kind of fish before. Makes for smaller packages and fresher tasting fish. I package them in single layers.
What you do is lay them on a cookie sheet and get them semi frozen then vacuum pack them. That keeps the food saver from sucking the water into the pump.
I have done that for quite awhile and then switched to freezer bags with the fillets and water to be frozen. If all of the air is out and the fillet is covered with water/ice I feel they they stay fresher longer. If there is any air contact at all it is not a good thing.
I freeze mine in water also.No chance of freezer burn and personally i think they taste better than other methods.
