1 1/2 lbs. of pork loin (cut into 1.5'' pieces)
4 jalapenos (cut into 1/2'' pieces)
1 yellow bell pepper (cut into 1'' pieces)
2 tablespoons of olive oil
1/2 teaspoon each salt & pepper
1/2 cup of apricot jam
2 tablespoons of white wine vinegar

In a large bowl, toss the pork and peppers with the olive oil, salt & pepper. Thread onto skewers and grill over med-high heat until cooked to your taste. While the kebabs are cooking, mix the white wine vinegar and jam together and baste during the last 5 minutes of grilling.
