steelhead filets
1/2 teaspoon salt
1/2 teaspoon black pepper (coarsely ground)
1/2 cup loosley packed fresh parsley leaves
2 tablespoons capers (drained)
1 green onion (cut into four pieces)
1/3 cup of sour cream
1/4 cup of mayo
1 tablespoon fresh lemon juice

Grease a ridged grill pan and heat over medium heat until really hot. Sprinkle fish with salt and 1/4 teaspoon of pepper and place in grill pan. Cook until fish flakes easily, turning only once and transfer to a plate. In a mini food processor, process parsley, capers, and green onion until finely chopped. Transfer to a small bowl and stir in sour cream, mayo, lemon juice, and remaining pepper until blended and serve sauce with fish. For an edible garnish, you can also toss in a few whole green onions in the pan when your cooking the fish.
