I'm a huge fan of dove kabobs and bacon wrapping with different peppers. Sauteing the veggies for a min before skewering to soften them helps keep the dove med rare. Doves are a great public land opportunity in Ohio. Good way to get kids hooked on shooting sports and wild game. I can share some good public locations for anyone wanting to give it a try who maybe hasn't or hasn't had much luck.

I have a good recipe for cantonese dove that my high school english teacher gave me back in the 80's haha. I can post it if anyone is interested.

I want to try some with Spiedie sauce. A buddy turned me onto it last year. Kroger grocery stores carry it if you have one nearby. It's definitely something different. I did it with chicken last year and the kids slayed it.

When I lived out west, we would camp out the weekend opener for doves. We would go out in the morning for the hunt then head back to camp and clean all the birds. For dinner we would fire up the grill and cook the dove breast wrapped in bacon with a slice of Jalapeno pepper in the middle. Add a cold beer and you are livin'!!!

Jrose I would fill the pepper with cream cheese a slice of water chestnut then the dove breast. Wrap that with a half a strip of bacon my favorite way to eat doves ducks and woodcock.
