It's nick named chicken fingers around my area. Usally grows on downed or decaying oaks. What did you find yours on? Their quite tasty with a chickeny type flavor.

How do you prepare them to be able to eat them?

I pick about 6 different kinds of shrooms. But I never touch the ones that I cannot positively identify and one other key question, is it the right time of the year for that mushroom to be growing?
Yes, I have seen those in the woods and probably very similar looking shrooms. What bothers me is calling it "chicken of the woods". I pick sheepshead in the fall aka sept-October from 200 year old white oaks. I have heard them called hen of the woods and quite a few other names which bugs me. I have also read where people claim to find them under all sorts of other trees which I simply refuse to believe. There is an edible mushroom similar to the above photo that will grow in september after the first real hard rain on lawns in huge numbers and size which people claim to be hen of the woods or sheepshead and definitely are not the ones I pick. I have to believe what you found in May is not the same one. But I dont have clue what you found in may.
I have read where more than 60% of mushrooms are edible but I sure would find somebody who eats them, then verify on the web exactly what they are, what time of the year that they grow and exactly where they grow. Its like the purple manes are supposedly edible but look like uck as they die out or the shelf mushrooms that grow from dead elms around morel time that are good if fresh. I wont touch either. Eating strange mushrooms is a recipe for disaster, like picking those little stump mushrooms and accidentally getting some wierdos in the batch.
