Not sure if its a top secret with some of you guys, but i'm lookin at making me some deer jerky. anyone got a good recipt out there? i want a sweet but spicy kind. let me know what ya got.....

Jayare, there are hundreds of ways to make jerky. Here is the way I make it. First start with 100% lean meat. Your jerky will go rancid if all the fat isnt removed. Next try and cut your pieces to the same thickness. You'll get a more consistent product in the end. IMO, you cant beat Hi Mountian jerky mixes. They are sold everywhere and for good reason. They dont cut corners on their spices, and make it very easy to make. I use the original flafor. Follow the directions and WEIGH YOUR MEAT!!!! That might be the most important tip. If you try and guess the weight you'll more than likley miss and either use too much or not enough cure and spice. After the cure and spice is added, I add marinade to my mix. A1 steak sauce is my wife's favorite. All you do is add as much or as little marinade as you like. BBQ sauce, liquid smoke, soy sauce, horseradish, whatever sauce you like. Let the jerky cure in the fridge for at least 24 hours. I use gallon zip lock bags. Every time you grab a beer from the fridge, grab the bags and work the meat around. Dehydrate overnight and viola!!! Hope this helps.

Couple pounds of sliced meat. 1/2 cup of the bottled Montreal steak seasoning. 1 cup worcestershire sauce. Combine in ziploc bag and refrigerate 24 hours. Move meat around occasionally. Lay out on oven racks so as to be sure no meat is touching eachother. Salt and pepper to taste over the raw to taste. put racks of meat in oven on 170 dgrees with door cracked open with a spoon to release the moisture. Usually takes around 4 hours. If you want it sweet, add a 1/2 cup of brown sugar to the bag bag before you marinate it.
