View Full Version : Braised Venison Steak with Gravy!

Well I decided to make some braised venison steaks (from the hind quarter) and thought I would do a cook along that Mully has made so famous. I'll never claim to be as good of a cook as Mully, I'll only claim to be far superior! LOL!

First we slice some onions...

We also cuts some carrots, celery, and mushrooms.


Then we gather our spices...

And add them to flour...

Then we take our steaks...

And add them to the bag of flour tossing to coat.


We then get a stock pot and put on med heat and add vegetable oil. Then we begin to sweat the veggies. Once the veggies are sweated, we remove and turn up the heat to med-high and begin to brown the flour dredged steaks...

Once the first side is browned we flip and brown the other side...

Once both sides of the steaks are browned we remove them and them to our vegetables. Drain off the excess oil and then take some Apple Liquor(I'm using home made Apple-Jack), or you could use apple cider, and add to the pot...

Stir the liquid to get the fond (all the bit and pieces) off the bottom of the stock pot...

Once the alcohol has evaporated add broth and bring to a boil. Once a boil has been reached add the meat and vegetables back to the pot...

The add some bay leaves and crushed juniper berries...

Cover the pot and place in a 375 degree oven for approximately 2-2.5 hours.

Oh, the braised venison steaks are plated with mashed potatoes, roasted Gold Nugget Squash and green beans.

Ummm, I think mully woulda had a boosh lite in the pic...;)

Shoot 56! Parsley is only good for freshening your breath. I say, if it does not add any flavor or texture...or it is not going to be eaten, it does not need to be on the plate. Plus there are green beans which add a green color...those are canned so they are a little brown. :irked:

Mully probably would have had a boosh lite, but I drink real beer(Miller Lite ;)).

Thanks 45, I went back and changed the braising time on the first post. Originally I had approximately an hour, but I think maximum tenderness would be achieved after at least the 2 hour mark, which should give your tenderness but not loose the texture where the meat is falling apart.

LOL....Seriously....I agree and nice job...I will be trying it in the near future...I'll let you know how it turns out!!!:biggrin:

Thanks for sharing. I'm trying it out tonight. The house is smelling good right now.

I didn't have any juniper beeries, or apple jack. I sliced up an apple, and used some Jack Daniels in mine! Had to after looking at your bottle!

Having french fried sweet taters from the garden with this, and corn that we grew also.

Let us know how it turns out. The whiskey should be good in that dish, as well as any type of brandy, sherry, red wine, etc. The apple should work too! The fried sweet 'taters sound most excellent, and you can never beat home grown corn. Let us know how everything turned out! :bouncy:

Stupendous!!!!! Everyone loved it.

Only thing I'll change is substituting the slow cooker instead of the oven for the later part.

That is some good grub!!!!!!!!!!!!!!
