I usually smoke the steelhead trout I catch not finding any other way I like it. I only caught 1 large trout, so I decided to try it on the grill again. Cut the cleaned trout into horseshoe steaks about 2" thick put on the grill on low using renolds non stick foil. Put some butter on the foil, seasoned with pepper & Emerils seasoning, cooked for 15 minutes on low turning several times. Put sweet baby rays barbecue sauce on both sides cooked for 5 more minutes. IT WAS GREAT!!!!!!! just thought someone else would enjoy this, Enjoy. Ed

Cool! I'll make a note for my dad and father-in-law. I keep 1 a year for my dad but they need to be under 24" or they are to "fishy" tasting. I'll probably still only keep 1 a year but it would give me some range!

Hi,
I put them in foil with a little lemon juice,butter,papiricka,salt & pepper.I love them.I put them on the Grill.

Small steelhead are kinda edible. I gave up on em years ago. I compost them instead and feed them to my tomatoes and then eat the tomatoes. Same with salmon. As far as I'm concerned, steelhead are just another invasive species. They get composted with the carp, sheepheads, gobies, and the entrails from the fish I do fillet. I remember one thread where a guy posted, about two pages, on how to prepare a steelhead. Ten to twelve hours of marination in an elaborate semi-secret recipe. Then into the smoker for another 10-12 hours with basting from yet another semi-secret basting recipe. He proudly proclaimed that his steelhead tasted like ham. I figure that if one goes to all that trouble to make a trout taste like a hog then something is wrong with the picture. I'll just buy a ham, compost the steelhead, and fillet the eyes and perch.

OK, I hate to do it, but I have to ask. Why would you keep them if you don't want to eat them? Is it that bad to just throw them back?:confused: :rolleyes:

WE have a few steelhead stakes in the freezer as well...Last time my dad made them I was so tired i didn't eat them because i almost fell asleep at the table...but I look forward to next time.

Mr Creosote arent you even mildly embarassed to admit that? Thats the most wastefull action I think Ive ever heard of. Steelhead are a prized gamefish and should not be wasted. They are superb and not at all difficult to prepare. Get a good recipe at the recipe forum theres tons of them. You are the first Ive ever heard of composting steelhead!!!

I fillet them, then grill them with lemon and butter.

Embarrassed? Not even remotely. A compost heap is a must for every gardener. Any organic material can be composted except red meat and oils like salad dressing. When mixed in a 1/3 ratio with grass clippings, dirt, fish, vegetable matter, a compost heap provides a rich humus that conditions the soil and fertilizes that plants without the salt buildup of commercial fertilizers like Miracle gro. Release good compost? Are you nuts?

One way to avoid that "fishy" taste is I put a little butter on some foil, and start my filet skin side down directly over the coals (or on high for a gas grill). After about 10 minutes you can get a spatula between the skin and the meat, then flip the filet. The skin and fat will stick to the foil (you want this to happen). Scrape off any remaining skin and fat (that gray matter under the skin-that's where the strong fishy flavor is). Then cook as you normally would.

Before eating, be sure to stand and sing a chorus of "Hail to the Victors".

i agree with maumeeriverfish,never heard of any one throwing steelhead in the compost pile i catch and release them. to kill and waste a trophy type fish is a disgrace i won,t be proud to have posted that thread..
